New Blog!!

Well I finally made a blog tonight... the name Cooker and Eater, came from how Dave (my fiance) describes our kitchen relationship! Well tonight I made Salmon and Goat Cheese Burritos with a Tomato, Cucumber, Avacado Salad with Tequila-Lime Dressing! Courtesy of Sandra Lee It was really good... but I forgot to take pictures. Here are the recipes. Enjoy :)

Salmon and Goat Cheese Burritos
1 lb salmon
2 tsp olive oil
1 tsp seafood seasoning
1 can black beans, drained
1 cup peach salsa (I used mango)
4 burrito sized tortillas
8 oz goat cheese

1. Preheat broiler. Rub olive oil over salmon and sprinkle the seafood seasoning. Broil until flakes (approx 4 min per side). Remove from oven, flake into bowl.
2. In a small saucepan, combine the salsa and black beans, bring to simmer , reduce heat, keep warm.
3. Make each burrito... spread the goat cheese on the tortilla, top with salmon, and black bean salsa, fold the burrito.

Cucumber-Tomato-Avacado Salad with Tequila-Lime Viniagrette
1 cucumber, peeled and chopped
2 medium tomatoes diced (I used cherry)
1 avacado (I used 2... Dave really loves avacado)
3 tbs olive oil
1 tbs lime juice
2 tsp tequila
3/4 tsp italian seasoning

1. Combine all vegetables in a bowl
2. Combine all liquids and italian seasoning in a container, shake vigorously, toss into salad
